If you’re heading out for breakfast with someone who doesn’t eat meat, it’s nice to have a couple of ideas before you go. Coffee Cup Cafe has a vegetable-filled omelette for a bigger breakfast. Boulder City Co. Store has avocado toast and bagels if you’d rather have something smaller with your coffee.

An omelette at Coffee Cup Cafe

The Cali Omelette at Coffee Cup Cafe brings together spinach, mushrooms, tomato, green peppers, onions and avocado, with pepper jack cheese and three eggs. If eggs and cheese are part of your diet, this is the dish to look for on the breakfast menu.

It’s a helpful option when some people want vegetables and others have their hearts set on a traditional diner breakfast. You can sit down together without everyone having to order the same sort of meal.

Coffee Cup opens at 6 a.m. daily, according to its website, so it’s also an option for an early start.

Avocado toast at Boulder City Co. Store

Not every morning calls for three eggs. Boulder City Co. Store, at 525 Avenue B, lists avocado toast and bagels among its food offerings. Its coffee service starts at 6:30 a.m.

If toast and coffee sound like enough, put this one on your list. You can browse the retail shop while you’re there, too.

The Co. Store website doesn’t list all the toppings, so ask what’s on the avocado toast when you order. If you’re choosing a bagel, ask about the spreads available that morning.

If you don’t eat eggs or dairy

The Cali contains both. For a vegan breakfast, ask the Co. Store whether its bread, toppings and preparation will work for you before settling on an order. If you have other dietary needs, mention those when you order at either place, including when choosing a side.
